Hello from CA, and Texas

Hi all,
Just got the #3.  I am really looking forward to what this smoker can do, and i am certain that i will be asking questions. Thanks in advance for the advice!

Hardpan, Welcome from SW Arkansas! You made a great choice with your SI#3. This forum is full of great recipes and people who are willing to help or offer advice with whatever you might need.

Welcome from Texas Hardpan! I have a #3 also and use it more than I thought I would. I haven't maxed it out either, lots of room for more. Stay in touch and share your experience, recipes and opinions with us. Happy smokin!

Hi Hardpan and welcome from the Keys. The SI3 is a great unit. You will have a lot of fun with it.

They hardly go together, but Ca does have a lot of physical beauty.  I own property in Texas, but work in Ca.  BTW, we have "spare the air" days here in Ca where we are not allowed to cook outdoors on any kind of wood, smoke or charcoal.  Kind of crazy.  I am looking forward to my first real cooking using the smoker.

Not usually ... we moved from one to the other ....

Welcome Hardpan!  And, you can probably totally use your #3 during those 'spare the air' days, since so little smoke even shows!  The smell though ... that will probably out you!

Enjoy your smoker, and take lots of pictures!  We like pictures.

Kind of crazy?  That's putting it mildly!  I was born in CA, and lived there until I was 14.  This stupid rule is one of thousands of reasons I would never live in that crazy state again, no matter how much money someone offered me! :o
