Sweet Potato French Fries Brined (oven baked)

These turned out great, total brine time for the fries was 4 hours.

Sweet Potato French Fries Brined (oven baked)

Ingredients
•   1-2 large sweet potatoes
1 T sea salt
•   2 T olive oil
•   1 T corn starch
•   Salt & Pepper & Parmesan cheese
•   1 12 oz. beer
•   ½ - 1 cup water
Directions
Preheat oven to 425 degrees using the convection setting. Line a pan (1” high) with foil and then place a cooling rack on it.
Scrub potatoes and cut into ½” thick fries. In a one gallon zip lock bag, add potatoes, beer, salt and water (add enough water to cover potatoes and place in the refrigerator for two hours.

Remove potatoes, drain and then pat dry. Add olive oil and cornstarch to a one gallon zip lock back mix and then add the potatoes, mix well.

Next remove potatoes from bag and sprinkle on both sides with a light dusting of salt/pepper and parmesan cheese. Place in oven a cook until the potatoes are golden brown about 25-30 minutes.
