It's good rub, Don, but it's not as "universal" as Jeff makes it out to be. ;)   If he posted a recipe for French toast, he'd say to sprinkle it with his rub.  I realize that it's his bread and butter, and is a very good rub, but make your own judgements on use.  Personally, I like it on pork, but not beef or poultry.

The memphis dust can be made with eliminating the salt.  Meathead change his recipe in may to remove the salt. I like the salt but he recommends without.  Go to amazingribs.com to read his thoughts.

Doesn't Meathead say you should dry salt brine first then use the Memphis dust? I thought that's why he took the salt out.

Jeffs rub is just one of many. It's a really good starter. Divot is right. He will say use it in your coffee...lol!

Ordered it yesterday, trying it this weekend.  By the ingredient quantities it looks like it's exactly what I was looking for.
I would have sold you my copy for 1/2 price.  I can't stand it.  Too much paprika and chili powder for my taste.  I guess my purchase was a donation.  It was a one and done for me.

SuperDave, although I don't care for Jeff's rub, his BBQ sauce is very good.  I figure 18.95 for that BBQ is well worth it.

I've tried Jeff's rub now on chicken and country style ribs...neither of which I was proud of but not sure Jeff's rub had anything to do with it (I overcooked 'em).  I do agree there's a lot of paprika and chili powder in it though but until I can manage to get the meat right I won't be able to do a proper taste test.

I did look at the Memphis Dust recipe and maybe I'll try that before I try Jeff's again...that looks good!

I was also looking for low-salt rubs as we've fought meats coming out too salty in the past.  We used this one last night, from UWFSAE.  Our local store didn't have dried lemon zest so that part was missing, and we used regular white sugar instead of demerara.

Overall great flavor, minimal salt, and ready to make with what was already in the pantry.

A POULTRY RUB FOR ALL SEASONS
   
1/2 Cup    sweet paprika
1/4 Cup    lemon pepper
1/4 Cup    demerara sugar
3 Tbsp      kosher salt
3 Tbsp      garlic powder
2 Tbsp      onion powder
1 Tbsp      dried oregano
1 Tsp        dried mustard
1 Tsp        dried thyme
1 Tsp        lemon zest
1 Tsp        cayenne pepper
1 Tsp        cumin

EDIT - adding picture of final product, it was delicious.

I'll try that for my next chicken dish...beef is getting so damn expensive pork and chicken are just about all I can afford.

I got salt out my diet years ago due to an inner ear disorder.  An unexpected benefit was I lost 50 lbs in a short time.  Now I hate high salt foods.  Anyway, here's a good source for salt free rubs http://www.savoryspiceshop.com/salt-free-seasonings and you can always add as little or as much salt as you crave.

Here's another good source http://www.bensonsgourmetseasonings.com/  I love their table tasty product because it has a very salty taste but no chemicals.  It's good on veggies, baked potato, eggs etc.  I buy it in the 1 lb packages

Thanks for the info.  I could fill a whole kitchen with rubs/spices recommended here.   Its quite amazing how many are out there to pick from.

Hey everyone,

Agree there are many great rubs, etc. that can be found in this forum.  I messed with my own low salt rub recipe for quite some time and finally called it good. I've been using this rub for the last 10 years or so for ribs.  Very low salt amount and provides the sweet/heat sensation when tasted that I strived for.  I will tell you that it has a pretty good kick to it.

I've never shared this "top secret" rub before with anybody but figure why not share a good thing in case anyone wants to try it and also since everyone has been so helpful with questions I've had in this forum.  Here it is, enjoy!

Schlem's Baby Back Rub:  (Schlem is part of my last name - makes enough rub for about six slabs of baby back ribs):

-  2) tbsp kosher salt
-  1/2 cup turbinado sugar/sugar in the raw (these are the same thing)
-  1/2 cup brown sugar
-  2) tbsp granulated garlic
-  2) tbsp onion powder
-  1/2 cup paprika
-  2) tbsp lemon pepper
-  2) tbsp fresh ground black pepper
-  2) tsp cayenne pepper
-  1) tbsp hot chili powder
-  1) tbsp mild chili powder
-  1) tbsp ground mustard
