First successful brisket
« on: January 17, 2017, 09:22:52 PM »
Well I’ve tried briskets many times over the years and never really liked the results until now.

Thanks to lots of advice from posts I’ve read on this forum and my SI #2, this brisket was amazing.

Started with about an 8lbs choice flat from Costco. Brined it overnight then seasoned with some Weber Steak and Chop seasoning and into the smoker for 9 hours. After taking it out of the smoker, I wrapped it in foil for about 2 ½ hours before slicing. This was the most tender, juicy, and tasty brisket I’ve cooked yet.

What temp did you cook it to?

I took it out at 192. Double wrapped it in foil then let it rest in a cooler lined with some towels for 2 hours before slicing.
