Author Topic: Do you drain the grease off the Boston Butts before you pull them apart  (Read 1914 times)

Just wondering, as I tried this today and got some grease drained off of them before I pulled them apart.  Also the thin layer of grease on the bottom, do you usually cook it intact or not?

I have always just left them intact and mixed it up with the rest when I pulled them.

When a butt is rested long enough, there should hardly be any grease left in the foil (it gets reabsorbed into the meat).  I don't drain pork butts.
