Always a favorite

Did a twice smoked ham for sandwiches and breakfast for our annual family mountain trip. Smoked it to for 4 hours to an IT of 140. Rubbed with a mix of mustard and maple syrup the some black pepper. Decided not to do a glaze this time. The flavor is outstanding.

Twice smoked is twice as good.  Maybe three times as good!

Man, David, that makes me hungry for a twice-smoked ham!  I haven't smoked one in a long time, and boy, are they good! :P
