Small load but Big Payoff

Small load for the 4D but BIG payoff!
Put 2 of these Rib Eyes in at 175 for 2 hours then up to 225 for another hour. When my desired temp was reached it went on the Blackstone 22 which was ready and waiting.

Totally Awesome!

What temp were they inside?  Seems like that long, at those temps, would have been well-done!  Am I wrong?  Looks great, from the outside, though!

Oh Tony,  your gonna make me come out in the open! Yep, I’m one of those “meat ruiners!” Lol, my desired eating temp is 148-150, as is my wife’s. It did take it much longer I believe also because I had it on second rack. I will lower them next time. There were two of them and the one in the picture was sliced night 2 and wrapped in flour tortillas. With the use of my FireBoard and Thermapen I can cook the rare as good as the rest, for my daughter and husband however.  The Black Stone is excellent for the Sear.

That's why we missed Tony so much. Uncovering the truth. He puts his thinking cap on for every post. I never would have noticed the possibility of the well-done steak. It's good to mention, in case someone else who might want medium rare, does not follow those times/temps.
