Well it took FedEx 13hrs from the time my #2 was loaded for local delivery. Had to do the ribs
on the Landmann, since I needed four hours to season. So my first "meat" smoke will be a pork butt starting Saturday night. This forum was the selling point for my getting a Smokin-It smoker.

I also just got the 3 and after my first smoke I will say you may also want to keep an eye on your drip pan. Mine was almost ½ full with just two racks of ribs.

David from Roswell,GA. My tools currently include the SI #2 with an Auber, Grill Dome, Solaire 27", Holland Grill (Companion) & Weber (Smokey Joe). The Companion & SJ are primarily used for tailgating.

Well I've been having so much fun with this smoker, I forgot the say thanks for all the welcomes. This really is nice to go to bed and have brisket or pulled pork the next evening. My first question for the group is using a water pan. Is this something to add for all beef and pork smokes? Thanks, Ed.
