I am considering purchasing a 3 and have a question about the temperature variations from front to back and bottom rack to top rack? Is there much variation?

Hi Hunter, Welcome aboard from N'East MA!
There is some variation from top to bottom due to proximity to the heating element. I have found that placing the larger items closest to the element makes it a non issue.
+1 on Brian's comment especially if you use a probe to monitor internal temperature of the meat.
