Dough Problem

  Any idea what would cause a round of dough to become sticky to work with after resting in the refrigerator? It was also very hard to stretch and wanted to spring back to it original shape. Any thoughts are appreciated!!

did you kneed it?
dough has to be kneeded to break down the gluten chains a bit

make the dough
kneed the dough
let it rise in a warm place like a turned off oven (in the winter let the oven warm slightly just so you can feel it's warm then turn it off) cover the dough bowl with plastic wrap
when it has finished rising doubled in size or so punch it down.. kneed it just a bit basically to fold it back over to a ball again
let it rise again .. same same .. punch it down again .. back in to a ball

then you can use it

Went through all the  steps.....  trying to figure out what I did wrong on this batch

not sure..start from the beginning

what did you put in your dough?

but it could be over or under kneeding

or too much water

or too much flour

usually too much water causes sticky .. but sticky and not stretchy enough usually don't go hand in hand either

Followed RGs dough recipe to the letter.....  went through all the steps.... stored in refrig for 2 days. Took the dough out and let it rest at room temp before working it. Pretty much it.

dough can be tricky sometime .. susceptible to changes in humidity and such.. almost always seems to have to be tinkered with

it can be dificult to say cause dough can be so finicky at time
