Best way to test the Interal Temperature on #2

I did not know what is the best way to check the Temperature on my #2.  I don't believe it is way off, but just wanted to find out for sure.  I have Maverick ET-733 Probes, but not sure how to go about doing this.

Advice and suggestions greatly appreciated.

Just got through doing 2 Turkey Breast, 1 8.19lbs and another was 7.34lbs.  Set temp at 240 and took 2 hours 35 minutes to reach temp of 165 on probe and check several places with instant probe.

Assuming that the auxiliary thermometer you will use is accurate, I would clip its probe as close to the  smoker's built in probe as possible. Good luck.
