BLUEBERRY ICE CREAM

BLUEBERRY ICE CREAM
3 c. blueberries
1.5 c. sugar
6 T Orange Juice
1.5-cup milk
2.5 cups heavy or whipping cream
3 egg yolks
1 Vanilla bean (4-6”)

Combine berries, sugar and orange juice in saucepan. Cook over medium heat until sugar is dissolved, allow too cool. Take mixture and puree in a blender until smooth. Next heat milk, cream and egg yolks, but do not boil. Cut vanilla bean down the center, scrape out all seeds, and add to cream mixture.
Next, add all ingredients together, place in a covered bowl and refrigerate overnight. 

Add mixture to your ice cream maker and allow it to churn for 25-30 minutes. Remove mixture and place in a freezer container and place in freezer for at least two hours.

This recipe makes 2 Quarts.
